National Chocolate Mint Day

“Scoops of mint ice cream with chips of chocolate cows.” - Jim Bishop

It's National Chocolate Mint Day!

Sponsored by: Immaculate Baking Company

"The flavor combination of chocolate and mint is incredible. Warm and pleasant, but something rejuvenating to the spirit, as well. The aroma-therapeutic properties of mint are just that: stimulating, revitalizing, refreshing, and cool. Like a breath of fresh air, sunshine on a gray (or snowy) day, mint in chocolate ice cream."

In 1995, Scott Blackwell started Immaculate Baking Company with a simple dream: bake great-tasting, all natural treats and inspire the natural artist in all of us. To this day, they continue to use the best all natural ingredients and support folk artist by making a gallery out of their packages. And, from day one, they have loved doing what they do. With Immaculate Baking Company company you know that they mean it - it reflects in their food, their fun packaging, and their day-to-day practices as a company.

Today, I got the chance to celebrate with Immaculate Baking Company's all-natural, limited edition "Chocolate Peppermint" cookie dough. They took their traditional chocolate cookie recipe and added real peppermint bark; and it's all you can smell when you first open the packaging. It's a completely hypnotizing scent of all the best parts of winter! I wanted to stand there all day and inhale the delicious aroma. I baked them according to the directions, but unfortunately they came out a little more crispier than I would have liked (I'm not sure if that's how their cookies just are or if my oven is being evil again). Overall, they were very good though - neither the chocolate nor the peppermint was overwhelming tasting, but a pretty solid balance. We put chocolate ice cream between two cookies and made little sandwiches, and it absolutely divine!

Happy National Chocolate Mint Day!
