National Stuffed Mushroom Day

Growing up I had this one aunt who made stuffed mushrooms at every holiday. She'd show up with one bag of mushrooms and one bag of stuffing, which was a mixture of bread crumbs, broccoli, and shredded cheese. Our very large family would mill about picking at other foods uninterested as they waited for her mushrooms to come out of the oven. The moment they were finished, she would announce: "Please don't eat the mushrooms, they are VERY HOT." Inevitably, no one would listen and many, many mouths were burned.

But many, many tummy's were happy.


I decided to make my own version of a stuffed mushroom today, and thanks to Galaxy Nutritional Foods I didn't have to stress about the "what do I do about the cheese?!" question I often seem to ask myself when I'm converting a recipe from "omnivore-friendly" to "lactose-free friendly." Galaxy seems to be present in nearly every store I go to: there's no need for me to go out of my way to find their product, and I love that kind of availability. It's also incredibly priced for a natural, "healthy foods" item meaning you're not going to break the bank, because the price point is on par with the normal dairy product it competes with. Beyond that, they're a company with a smart focus: "to exceed the high expectations of health conscious consumers everywhere by offering smarter and more sensible eating alternatives."

The only complaint I have with their cheese/cheeze slices is the packaging. I initially found it a little misleading: the first time I bought their product, I was under the impression it was vegan friendly because the item was called "Veggie Slices." It was only after I ate it and looked at the ingredients that I realize it contained casein (a milk protein), therefore making it vegetarian, but not vegan. If you're expecting an entirely animal-free product make sure it says VEGAN in big letters right on the front - don't make the same assumption I did.
