A weird culinary idiosyncrasy about me is that I love my pancakes fresh and I love my waffles frozen. When I revamped my lifestyle in early 2009 to focus more on all-natural and vegan foods, one of the foods I discovered was Van's Natural Foods waffles. Until today, I had no idea that they started in the 1970's as a waffle eatery in Southern California. A decade later after outgrowing themselves, they decided to begin selling their beloved frozen waffles in grocery stores that way they could be available to more people . . . like me!

Thankfully, unlike their more mainstream counterparts who make frozen waffles chock full of Yellow #5, Yellow $6, Blue #2 Lake, Red #40 Lake, an abundance of sodium, and a severe lack of any nutritional value, Van's is a company that actually cares about what they and their customers eat (which means you and I get a breakfast food that's full of good carbs, is high in fiber, and totally protein-packed which gives our bodies energy and helps our brains stay-focused longer!).

They value artisanal quality; cooking their products in small, minimally processed batches with always-fresh ingredients. And, since they want everyone to be able to enjoy their waffles, they offer gluten free, organic, vegan, mini, and whole grain options.

I decided that for tonight's food holiday, I would celebrate with a little waffle dessert. Van's Gluten Free Blueberry Waffles brushed with a mixture of lemon juice and sugar, then topped with fresh blueberries, a drizzle of agave syrup, and a sprinkling of confectioner’s sugar. It tasted EXACTLY how I imagine the waffles on the box would taste if they were real. An invigorating blend of flavors that seemed idyllic for springtime!
