National Banana Cream Pie Day

I go through these spurts where I really miss places I've traveled to. Lately, I've had England on the mind a lot. Now, despite forcing my vocabulary to include certain words (among them: gutted, chuffed, knackered, rubbish, bloody, bin), drinking afternoon tea, and listening to BBC Radio 1 every day I can't seem to fill that British void.

So tonight, I made a Banoffee Pie in honor of today's food holiday (because when I think of banana's and dessert - THIS is what I think about! Not that banana pudding in a pie shell American dessert that US Armed Services voted their favorite dessert in 1951), and it was totally lush.

There have been very few foods that have frustrated me over the course of the past few years as I've attempted to eat as vegan as possible. The big one that continues to impede my dessert recipes is whipped topping. How am I supposed to make layered desserts if I don't have a good, stiff "cream" to use? And what am I supposed to put on my pies that won't liquefy and turn into a runny mess?

I tried the old "take a can of coconut cream, refrigerate it so that it separates, spoon whatever settles to the top in a chilled bowl, add powdered sugar, and mix for thirteen hours or until peaks form," but that didn't really work. Also: I'm sick and tired of coconut milk being the answer to everything. I don't WANT to always use it as a replacement for dairy, because I don't need the taste of coconut permeating my every recipe.


That's why today - especially today - I'm thankful for Soyatoo's Soy Whip. It comes in a little box and is super easy to make: you just whip it (whip it good) until it's fluffy. And then you can use it like you would use any whipped topping. Which means: layered desserts! And, toppings for pie (LIKE TONIGHT!)! And happy, happy mouths.
