National Eat Your Noodles Day

It's National Eat Your Noodles Day!

Did you know that noodles and pasta are actually different (unfortunately, somewhere along the lines, we've sorta made the terms interchangeable)? Pasta is generally made from durum wheat flour and water, and noodles are usually made with some egg of some kind (and the National Pasta Association has even deemed that noodles must contain at least 5.5% egg solids by weight to be considered a noodle). While many cultures claim they created the noodle, it was most likely the Chinese (seriously - an archaeological dig in 2005 came up with a bowl of 4,000 year old pasta).

And now you're all the wiser, foodies.

When we were little, one of our favorite staple cold-weather foods was my mom's "Chicken Noodle Casserole".  Although it's something I wouldn't eat now, I asked her for the recipe anyway - it's important to me to know how to make the foods that defined my childhood.

I tried to make a vegan version of it, but sadly it didn't come out quite like I remembered... like my childhood on wintery days tasted like. But it was still an awesome way to celebrate today's food holiday!
