National Ravioli Day

They absolutely do, too. Rising Moon Organics makes being a vegetarian entirely too easy and proof that you won't be "missing out" on any other foods.

Now, they generously sent me three different varieties of ravioli to try for today's food holiday. And you're all cray-cray (isn't that what all the kids are saying these days?) if you thought I wasn't going to eat all three types tonight.

The time is now, raviolis: get in mah mouf.

Organic Butternut Squash Ravioli
Suggested preparation: Toss with a curry sauce (made from butter, cream, curry powder, honey, sea salt, and black pepper).
My preparation: Tossed with a vegan version of their curry sauce (made from Earth Balance, coconut milk, curry powder, agave, sea salt, and black pepper) and topped with walnuts.
Thoughts: . . . why have I lived so much of my life without this dish?! No, seriously. These have become an instant favorite - what a beautiful array of flavors (I was initially concerned about the butternut squash being artificially sweet like so many of them seem to be). The only confusing thing is why they suggest a non-vegan sauce recipe to go with these vegan raviolis. Regardless: I'll be making this again. And again. It was so good, the person I was eating with licked - literally licked - his bowl clean.

Organic Four Cheese Ravioli
Suggested preparation: Toss with a tomato and basil sauce.
My preparation: Placed on a bed of cherry tomatoes, then topped with tomato sauce and julienned fresh basil.
Thoughts: This really had quintessential Italian flavors. The raviolis were lovely and plump; the combination of tangy cheeses inside it made for the perfect blend of delicate, yet bold flavors.

Organic Spinach Ricotta Ravioli
Suggested preparation: Toss with a tomato and mushroom sauce.
My preparation: Tossed with tomato sauce and topped with sautéed portabella mushrooms.
Thoughts: I'm not sure why, but these were my least favorite. Just seemed a little bland to me, especially in comparison to the other two extraordinary options. That being said: I still helped clean the plate!
