National We Love Broccoli Day

It's National We Love Broccoli Day!

I have always loved broccoli. Even as a kid, "chicken noodle soup" wasn't what we ate when we were sick. Instead, my mom always got us broccoli and cheese soup. And when I was an athlete in high school, one of my favorite post-game foods on the bus trip home from wherever we were playing was a baked potato topped with broccoli and cheddar that I would order from whatever fast food joint we stopped at to dine.

When I was in college one year my mom started making this casserole around the holidays made of broccoli, cheese, and crushed crackers. This became an instant favorite in my family, and she began making it more often. Over the years - as any good foodie would do - she's experimented with it (adding different veggies, different cheeses, etc), but she usually always settle back on the original dish. And it can EASILY be made vegan by substituting the real cheese for mock cheeze!
