National Cordon Bleu Day

It's National Cordon Bleu Day!

I'm not proud of the fact that one of my favorite foods when I was younger used to be those nasty pre-packaged frozen stuffed chicken breasts. The broccoli and cheese were the best in my opinion followed closely by the cordon bleu ones.

You know, now that I think about it, I'm not sure I've ever actually had any other version (subtext: chef-prepared, fresh, gourmet) of chicken cordon bleu then those frozen-blocks-of-sodium-and-fat . . . of which I unabashedly loved.

There are a slew of food holidays throughout the year that I am so looking forward to, and tonight was definitely one of them. I like the challenge of taking flavors I used to enjoy (and that are traditionally associated with "meat") and manipulating them so they become veg-friendly. Fortunately, we're in an era right now where with a little "out-of-the-box" thinking it's tremendously easy to recreate any dish in any form. So play around with the flavors of today and have a...
