National Day of the Mushroom

I am generally afraid of any food that I have to rehydrate. I think this stems from space food.

When I was little, I used my babysitting money to purchase a package of spaghetti with meatballs and an ice cream sandwich. Excitedly, I remember tearing into the space food and dumping it into my mouth. And promptly spitting it out again. I never read the instructions where it said it needed to be rehydrated with water before eaten. Whoops.


Today, I had the chance to try FungusAmongUs Orangic Mushroom Medley, a dried mixture of porcini, shiitake, crimini, maitake, oyster, and chantrelle. What a beautiful array of woodsy, complex flavors and smells - once rehydrated, that is (I'll be honest, the smell is a little off-putting when you originally open the package). I'm a huge "texture person" and I was delightfully surprised at how dense, how - and this is totally awkward to say, but - meaty they seemed; the mushrooms weren't "mushy," slimy, or grainy at all (which I thought they might be - I'm telling you, space food ruined me).

FungusAmongUs are The Organic Mushroom People. Besides dried mushrooms, they also make things like dried soup mixes, rubs and seasonings, and truffle products (um, hello, truffle mustard? *swoon*).

Anyway, the package of dried Mushroom Medley included a fettuccine recipe on it. It was a fine way to eat the day!
