National Peach Cobbler Day

It's National Peach Cobbler Day!

I'm realizing that certain foods I've been intimidated by for years aren't as difficult to make as I have irrationally convinced myself  they are.

Like peach cobbler.

(Listen, if folks on the Oregon Trail were making this deep-dish fruit dessert over an open fire while dying from dysentery and suffering the loss of drowned ox, I think I can manage, too).

I'm not sure why, but the whole idea of tossing raw dough on top of some fruit and baking it freaks me out. I KNOW IT DOESN'T MAKE SENSE, YOU DON'T HAVE TO REMIND ME (other "Nonsensical Stuff about Steff": I'm overly concerned that someday I'm going to open a bag of popcorn and a kernel is going to pop in my eyeball). I'm just convinced that it can't be as easy as it seems to be. There MUST be some trick to making cobbler that I don't know because I don't descend from cobblin' making people (I descend from the "throw some smashed pork in a pie crust and call it good" kind of people.)

So thank you, Almanac of Eats, for forcing me to face some fears. Today's cobbler actually came out pretty good - a little too sweet, maybe, but sugar and fat don't count when you're eating the year.
