National Strawberry Rhubarb Pie Day

It's National Strawberry Rhubarb Pie Day!

It's growing season here in New England, and the rhubarb plants are just gorg. I've been able to get several stalks from my CSA as well as steal some from my neighbor next door (she's an elderly woman who'll let me pick raspberries, blackberries, mulberries, apples, or rhubarb from her land... but if I touch her blueberries, she'll cut me off. And maybe haunt me when she dies.).

And when there's fresh rhubarb in my world, that means one thing: pie.

(Dear lady in the West End: thank you for letting us pop a squat uninvited on your front steps for this photo. I saw you behind your curtains wondering what the heck we were doing. I appreciate that you didn't ask us to leave. The next time I see you, I'll give you a pie or two.)

By the way, you know what makes mini pies extra awesome? You can freeze them, and then take them out one at a time to eat when you want to instead of having a cumbersome pie you need to slice all up.
