National Gingersnap Day

Gingersnap cookies go by several different monikers including Ginger Biscuits, Ginger Nuts, Pepparkakor, and Cornish Fairings.

But what's in a name, right?

Especially when these cookies pack a powerful health punch (I don't know about you, but any time I can eat cookies that are also good for my body? I'm all in!); ginger has been known to be a homeopathic remedy to treat diarrhea, indigestion, migraines, heartburn, and even arthritis. It can be a little pungent, so really there's no better way to eat it then in cookies.
And I think Glow Gluten Free would agree!

These lovely cookies, which are gluten, casein, trans fat, and preservative free snuck their way into my heart a little more than a month ago and have never left (my rabbit enjoyed them as well, and he's got excellent taste so I know they're awesome!). Owner Jill Brack and her daughter, Stella, began baking GF cookies when they were both diagnosed with celiac disease. They were received so well by friends and family that they began selling them in stores.

"Nearly 1 in every 100 Americans are affected by celiac disease, an auto immune disorder in which the intestines become damaged by eating gluten, the protein found in wheat, rye, and barley. As more and more people are diagnosed, the demand for good gluten free goodies is rising," writes Brack, who's favorite Glow cookie are the Gingersnap ones!

And I can see why. Glow Gluten Free's Gingersnap cookies taste of fresh ginger, but in a non-overpowering way (because I like ginger a whole lot, but I could never understand those people who eat, like, candied ginger cubes... blech). I was impressed with this accomplishment seeing as most gingersnap cookies taste more like bottled spices than they do of anything realistically ginger. The smell was intoxicating, too! I opened the package of cookies and had everyone in the room stick their nose in to breathe the aroma in deeply. Yum. Yum.
