National Lemon Meringue Pie Day

It's National Lemon Meringue Pie Day!

Lemon meringue pie... a shortbread crust, filled with lemon curd and fluffy, toasted egg whites. While the recipe as we know it today has been around since the 1800's thanks to Swiss baker Alexander Frehse, lemon flavored custards and pies have actually been eaten since the Medieval times and meringues have been around since the 17th century.

And now you're all the wiser, foodies.

Personally, the idea of egg whites slathered over the top half of a sweet pie kinda grosses me out. Which is why today, I'm celebrating by making this food into a cocktail, of course (wish I could take the credit, but I actually found this drink at Cookin' With Super Pickle and adapted it for my own dietary needs and what I already had in my house by way of ingredients)!
