National Rice Pudding Day

A while back I had approached Suzanne's Specialties about sponsoring National Fluffernutter Day. I knew they made "Ricemellow," a vegan alternative to traditional Fluff, and I had wanted to try it for years (after all, I'm from New England - home of dang Fluff - and, I've had my fair share of "pb+fluff's" when I was a little chick). I wasn't expecting them to graciously send me a box filled with other goodies.

But, I'm glad they did.
One of the things they sent me was a bottle of "Just-Like-Honey." According to their website, it's a rich and delicious honey-flavored syrup specially formulated with natural sweeteners to duplicate the unique properties of regular honey therefore avoiding the allergen problems related to bee pollen. It contains no emulsifiers, stabilizers or preservatives. "Just-Like-Honey is hypoallergenic, gluten-free and is made without the use of any cane or beet or refined sugars."

So what's it made from then?

... magic.

It's one of the best vegan products I've tried to date... a) I can't believe how much it tastes and acts like honey; b) as far as a sweetener goes for baking purposes, it's better than any maple or agave syrup I've ever used; c) it never seems to go bad. I'm sure it does. It probably already has, but it doesn't seem like it (I don't see anything growing and the smell hasn't gone off, so I'm good to go, right?). And since there's no yucky animal byproducts or chemical crap of any kind in it, I'm pretty sure it's safe to eat.

Magic doesn't go bad anyway.

In all seriousness, I will probably weep for days when I run out of the Just-Like-Honey, because I'm not sure anywhere local to me carries it. It's THAT good.

(Side note: so sorry for the state of the Just-Like-Honey jar. I literally use it ALL the time. So... really it's a sign of love!)
