National Sponge Cake Day

It's National Sponge Cake Day!

Sponge cake is based on three ingredients: flour, sugar, and eggs. It's believed to be one of the first non-yeasted cakes.

And supposedly, sponge cake with jam and cream was one of Queen Victoria's favorite teatime snack.

And now you're all the wiser, foodies.

When I think of sponge cake, oddly enough I think of Jordi Martinez. He was the three year old boy I au paired for when I lived in Ireland. He didn't speak a lick of English, and the only things I knew how to say in Spanish (his nationality) was "sit down" and "cookie" - important things to know when dealing with a three year old.

I wasn't sure what to do with him, and he didn't know what to do with me. So, after playing football and eating cookies, we'd sit down and watch American cartoons. Jordi's favorite was Spongebob Sqaurepants. Which he couldn't say properly. So, in his cute little accent he'd sing along: "Ponjabob pairpan, Ponjabob pairpan, Ponjabob pairpan... PONJABOB!"

So... today's little treat is with him in mind.
