National Nachos Day

I wish every day could be Nacho Day.  They're one of my favorite foods to make at home. I'm also embarrassingly messy and gluttonous when I eat them, so it's best if I'm where no one can see me and/or get-in-my-way-and-lose-a-hand-as-I'm-plowing-through-a-mountain-of-food.

Nachos were created by Ignacio "Nacho" Anaya in Piedras Negras, Mexico in 1943. Wives of U.S. soldiers stationed in Fort Duncan went to eat at a place called Victory Club after it had already closed for the night. Not wanting to disappoint his customers, maitre d' Ignacio whipped together a dish for them (he must have known how dangerous a hungry woman can be) and called it "Nachos Especiales" - it consisted of fried corn tortillas, melted cheddar cheese, and sliced jalapeƱo peppers. Word spread through Texas and Mexico about his new snack, and it became so popular Ignacio eventually opened his own nacho-based restaurant.

And now you're all the wiser, foodies.


Cheese is a key (and one of the original three) element(s) in nachos. But finding the right kind to deliver that authentic nachoy goodness that's also dairy-free can be a bit challenging. Toppings for nachos are endless, but for today I'm going with tortilla chips, FYH's Nacho Vegan Gourmet Cheese Alternative, refried beans, vegan taco crumbles, shredded lettuce, guacamole, salsa (on the side so the chips don't get mushy), and limes to squeeze all over. Go big or go home, right? I don't mess around when it comes to nachos.

My only "complaint" with FYH's Nacho Vegan Gourmet Cheese Alternative is how crazy fast it solidifies again after being melted. I wasn't even halfway through eating my continent-sized platter of nachos before the cheese had gone from sexy, goopy sauce to ribbons of coagulated cheese. While that was annoying (which is really all it was), I have to admit: it did make the clean-up one of the easiest I've ever experienced in my life as the cheese didn't really solidify to anything. It just peeled right off. And into my belleh.
