National Fritters Day

"There are men that will make you books, and turn them loose into the world, with as much dispatch as they would do a dish of fritters." - Miguel de Cervantes Saavedra

It's National Fritters Day!

Fritters are one of those universal foods where anything goes. Meat, veggies, fruits... as long as you dredged it through flour or a batter (similar to that of pancake) and pan or deep-fry it, you're good to go.

It seems corn and apple fritters are two of the more popular options in the United States, but I really wanted to do something special. And different. Twelve months into this attempt to eat the year, I have to do something to keep each day unique and interesting. So, today I made about a dozen fritters using my Thanksgiving leftovers.

And I ate all of them.

Happy National Fritters Day!
