International Carrot Day

It's International Carrot Day!

It wasn't until I was an adult that I realized three important things about carrots: 1) there are purple colored ones (mind blown); 2. my parents lied to me (and yours most likely lied to you, too) - carrots don't actually improve vision. If I had known that eating a bowl of carrots dredged through ranch dip wasn't going to negate the hours I spent with my face inches from the TV screen when I played Super Nintendo, I wouldn't have done it... eat the carrots that is. But they are jacked with beta-carotene - which converts to vitamin A in the body - and that does help with general eye health; 3. if you eat a lot of carrots you may turn orange, specifically the palms of your hands and the soles of your feet. It's called "carotenemia" (and, might I just repeat: mind blown).

And now you're all the wiser, foodies.

There are loads of different ways you could go about eating today's food holiday. It's still cool enough out that a hearty carrot and ginger soup would be a perfect option. Looking for something that takes a little less effort? No worries! Remember - many restaurants offer cold slaw as a side dish (and that would totally count as celebrating, too!). I decided to cut right to the heart of things and enjoy a raw carrot with the perfect companion for International Carrot Day: my pal, Boone. Who knew rabbits made such outstanding dinner companions, eh? You'll have to excuse him though, as (evident by the above photo) his table manners are a little rusty - I had to ask him multiple times to not crawl onto his dinner plate or eat the center piece. Still - I wouldn't have wanted to celebrate today any other way!
