National Garlic Day

"What garlic is to food, insanity is to art." - Augustus Saint-Gaudens

It's National Garlic Day!

My sister is a fiend for garlic. Whenever we share recipes I need to dial back how much she suggests using, because it's usually enough to ward off a continent of vampires (the old school kind, not the sparkly hipster kind). Maybe she knows something I don't, though - garlic reduces cholesterol, lowers blood pressure, prevents fatty build-up in the liver, and allicin (what gives garlic it's unique smell and taste) is one of the most powerful antioxidants there is meaning garlic is not only awesome for the immune system but can act as an antibiotic, too.

I think maybe I'll start using the amount of garlic my sister recommends!

This year I discovered Pinterest (feel free to connect with me there!). I had been holding out on joining, because... well, just because, really. Sometimes a girl has to put her foot down for no reason, right? But I finally gave in and have now spent countless (did I mention countless?) hours pinning and repinning photos of dishes I'd like to make. Pinterest really is food porn meca, and I can't seem to get enough. Anyway, I'm committed to making some of the recipes I find on there, like "Hasselback Potatoes"... which is what I attempted to make for today's food holiday. Only, as you'll see...

... it didn't really come out the way it was supposed to (oh, you can't see? That's because I've got salsa and soyrizo hiding my hideous mistake). I made mine with a sweet potato, Earth Balance, and Daiya's "Jalapeno Garlic Havarti" wedges. Only... the cheese and butter didn't stay in the potato (which was totally mangled, by the way - cutting slices into it made the whole thing arch into a stiff slinky) as advertised, but instead melted absolutely all over the place.

So, here's hoping you have a much more successful (and just as delicious)...

Happy National Garlic Day!
