It's National Lima Bean Respect Day!

I have always felt badly for both Lima beans and Brussels sprouts. Despite being delicious and nutritious they have really bad reputations among kids (maybe children are predisposed to hate foods that start with a city... or maybe they inherently know that raw Lima beans contain trace amounts of cyanide).

I hadn't had a lima bean in recent memory and was pleasantly surprised to find that they tasted like northern beans had a baby with edamame. Lima beans are full of protein, fiber, iron, folate, and magnesium making these good for the heart, for the digestive tract, for regulating blood sugar levels, and for energy levels, too.
