National Raspberry Popover Day

It's National Raspberry Popover Day!

When I took on my first popover day (which I believe was National Blueberry Popover Day), they came out like soggy muffins. A good year later and I went into today like a champ. My popovers - from start to finish - took less than forty-five minutes. And they came out delicious! Well, as delicious as they could be with non-locally produced raspberries,that is.

Do you top your popovers with butter, honey, maple syrup, powdered sugar, or preserves (immediately after this photo was taken, I slathered both Earth Balance and some raspberry jam on my popovers...UMYESPLEASE!)? I don't think you can do wrong with whatever you choose!
