National Potato Day

It's National Potato Day!


Potatoes are quite the universal food, and they've been part of our global cuisine for centuries. Not only are they popular in this atmosphere, but potatoes have also been cultivated in space, too. The startchy veg is full of vitamin C and B6, potassium, folate, iron, zinc, and fiber.

And it tastes darn good in a multitude of ways, too.

The obvious answer for today is french fries, no? What about mash? Gratin? Sweet potato pie with marshmallows? Needhams? Potato salad, a root vegetable soup, chips, hash browns, latkes, dumplings, baked potatoes topped with sour cream and bacon bits or chili and cheese, donuts, colcannon, aloo gobi, bauernfrühstück, shepherd's pie, gnocchi, funeral potatoes, potato bread, poutine...

Maybe all of the above?
