National Raspberry Tart Day

It's National Raspberry Tart Day!

There's some serious discrepancies as to whether National Raspberry Tart Day is on May 3rd or August 11th (berries are definitely in season on this latter date, so it's hard not to agree with the 8/11 camp). With so many different sources on both sides of the fence though, it leads me to wonder if it's not actually on both days. Instead of choosing sides, I'm going to do what I do best: celebrate the holiday on both days! So should you!

A tart is very simply a flaky open pastry base topped with custard, ganache, fruit, custard and fruit, ganache and fruit, etc. They can even be savory, too (think quiche!).

I usually make my raspberry tarts with a raw, sweet nut cheeze. But it doesn't need to be that complicated. You could very easily make a basic tart crust, sprinkle some sugar on it, fill it with raspberries, bake it until the crust is golden and the raspberries lose some of their liquid, then serve. Or toaster pastries, more commonly known as Pop Tarts, work as well (like my raspberry pop tarts seen above)! It really can be that simple!
