National Salami Day

It's National Salami Day!

Salami is fermented, cured sausage that's been air-dried. I ate a lot of it in Spain with cheese and crusty bread for our late night "dinners", which makes sense since salami's (cured meats in general) been made in that region of the world for thousands of years. I think it's safe to say that they know what they're doing!

My family has had a bizarre love affair with salami for ages. My mom used to make a "salami cake" for holidays; but, I wasn't quite feeling that today. A big old veg-friendly, grilled salami sandwich with mozzarella, smoked provolone, jarred roasted red peppers, artichokes, arugula (which I totally forgot to put on!), and mayo was the perfect way to celebrate, though!
