Mississippi

Statehood: December 10th, 1817 (20/50)

Ahh, Mississppi. Remember that time I blew a whole lotta bank at a blackjack table at one of your infamous casinos? Yeah, it's a bit vague for me, too. But I know I did because I've got a $1 chip in my house somewhere.

MS is so much more than a state with a big old river named after it - it's a place of innovation. The first first human lung transplant and first heart transplant happened in 1963 and '64, respectively, at the University of Mississippi Medical Center by Dr. James Hardy.

A place of culture. Did you know that The International Theater-Dance Committee has only sanctioned four cities in the world to hose the International Ballet Competition? Moscow, Russia; Helsinki, Finland; Varna, Bulgaria; and Jackson, Mississippi. Also Jim Henson was born here. So... your argument is invalid.

And it's a place of healthy competition... the International Checkers Hall of Fame is located in Petal, MS. King me, bruddeh.

Might as well mull that over, Mississippians, while we make do with more milk.


State Beverage: Milk

The Mississippi State Legislature adopted milk as the official state beverage in 1984 because of the hundreds of dairy farms the state's home to. I'm on a serious ice cream kick these days, so I hope you'll forgive me for back-to-back ice cream recipes!

Makes: about 2 cups of ice cream

Ingredients:
1 14-oz can of full fall coconut cream
1 cup almond milk
2/3 cup cocoa powder
2/3 cup sugar
2 Tablespoons cornstarch
1/8 teaspoon salt
1 teaspoon vanilla extract
1 1/2 cups brownie/cake bits

Method:
PLEASE NOTE: You will need an ice cream maker for this.

In a sauce pot on medium heat, combine all the ingredients MINUS the brownie or cake bits. Bring to a slow rolling boil, about 12 to 15 minutes, whisking constantly to make sure ingredients are blended, that there are no lumps, and so the mixture doesn't thicken too much.

Pour hot mixture into a container and cool in refrigerator several hours.

When ice cream mixture has cooled tremendously, pour contents into your ice cream maker and turn on for however long your machine takes - mine takes usually 30ish minutes to combine. At about the 27 minute mark, toss in the brownie/cake bits. Let combine and swirl through.

Eat immediately or scoop ice cream into a new container and place in freezer immediately.
