Statehood: August 1st, 1876 (38/50)

If at first you don't succeed...

Colorado was denied statehood by President Johnson in the mid 1860's (for a plethora of reasons, including a concern over their low population [which equaled lack of representation in congress]). But that didn't stop them from trying again, and on August 1st 1876 - on the country's centennial - President Grant issued a proclamation granting them statehood.

Now THAT's a celebration!

So is the natural beauty of Colorado. Besides Rocky Mountain National Park, Garden of the Gods, and Red Rocks (one of my favorite performances from here Mumford & Sons doing "Awake My Soul") if you love hiking, you should check out Pikes Peak - called "America's Mountain" it reaches well over 14,000 feet above sea level.

If heights don't scare you, maybe Colorado's 32-foot Blue Mustang sculpture will. The creator - Luis Jimenez - was killed during it's construction when part of the sculpture fell on him and severed an artery. The moderately demonic looking "Blucifer" can be seen coming in and out of the Denver International Airport.

A Colorado food: Breakfast Burritos

Since Colorado is one of the few states without any sort of official state food, today we're celebrating with a breakfast burrito. No, CO doesn't lay claim to its invention (though they do get to claim Chipotle), but it's a beloved food in various parts of the state. What you haven't heard of Den-Mex (like Tex-Mex) before?

Makes: 4 burritos

1/2 Tablespoon olive oil
6 oz. chorizo or soy chorizo
4 eggs
4 6-inch tortillas
1/2 cup cheddar cheese
4.5-oz canned green chiles
1 avocado, sliced
Optional: baked tater tots

Add the olive oil to a pan on medium-high heat. Add chorizo or soy chorizo and saute for 7 to 10 minutes (until meat has a bit of darkness/char on it). Remove from heat. Fry eggs in same pan to your preferred liking. To assemble, place one egg inside a tortilla, sprinkle with 2 Tablespoons cheese, spread 2 Tablespoons of green chiles on top of that, add slices of avocado, and serve immediately with hot sauce. Repeat three more times. Optional: add baked tater tots into breakfast burrito sandwich as well. An entire breakfast meal right there in the palm of your hand!
